Brown Stew Chicken
(Preparations---- prep time 10 min, cook time 10-15 min)
1lb chicken cut to desire
1/2 tsp chicken seasoning
1/2 onion slice
1 stalk scallion
2 cloves of garlic
1/3 tsp salt
1/2 cup veg oil
1/3 cup Jammin sauce
1/3 cup water
Season chicken with dry seasoning. Add vegetable oil to hot skillet then add chicken when oil is hot. Turn chicken frequently until brown. Drain oil from skillet, then add remaining seasoning, water, cover and leave for five minutes to simmer. Add Jammin sauce, cover and leave for another 3 minutes. Remove from heat and serve.
Escovich Fish
(Preparation time 5 mins cook time 10 mins)
1lb snapper fish head off, and bone in cut in 3 pieces
A pinch of salt
1/3 tsp pepper black or red powder
1/2 green bell pepper sliced
1/2 red bell pepper sliced
1 small onion sliced
1/3 tsp thyme
1 stalk scallion
1/2 cup vegetable oil
1/3 cup water
1/3cup Jammin sauce
1tsp Lemmon juice
Season fish with dry seasoning add lemon juice. Put skillet on heat add vegetable oil, Add fish when oil is hot. Turn fish on each side to get even color, remove oil from skillet add water and remaining seasoning leave covered for 3mins, add Jammin sauce cover and leave for 2min, turn fish over and cover leave for 3 mins. Remove from heat and serve.
Jerk Chicken
(Prep time 8mins, cook time 15-20 mins)
2lbs chicken cut at joints
3tbs Jerk chicken sauce
1/3 cup Jammin sauce
Charcoal
Charcoal grill
Season chicken with jerk seasoning let sit for 5 min. Add charcoal to grill and light leave to catch. Add chicken to grill turn frequently when jerking is finish serve with jammin sauce.
Pork or Beef Ribs
(Prep time 10min. Cook time 20-30min)
1 side of rib
1/3 tsp salt
1/2tsp black or red crush pepper
1tbs all purpose seasoning
1tbs marinade
1/2 tsp onion powder
1/2tsp garlic powder
1/2 cup Jammin sauce
Add all dry ingredients to ribs gently rub in, add marinade rub in cover let sit for 5 min. Add ribs to grill turn frequently check ribs for tenderness then brush on Jammin sauce leave on grill for another 5min keep turning rib over and over until desire color appear remove from grill and serve.
